Chef's Tip
Allow the bread to soak in the custard mixture for a full 30 seconds per side. The brioche should absorb the custard but still maintain enough structure to hold together when transferred to the pan.
Instructions
- In a large, shallow dish, whisk together eggs, milk, heavy cream, vanilla extract, 1 teaspoon cinnamon, nutmeg, salt, and 2 tablespoons sugar until well combined.
- In a small bowl, mix the remaining 1/2 teaspoon cinnamon with 1 tablespoon sugar and set aside for topping.
- Heat a large non-stick skillet or griddle over medium heat. Add 1 tablespoon of butter and let it melt.
- Working with one slice at a time, dip bread in the egg mixture, allowing it to soak for 30 seconds per side.
- Place 2-3 soaked bread slices in the skillet (don't overcrowd) and cook until golden brown, about 3-4 minutes per side.
- Add more butter to the skillet as needed between batches.
- Transfer cooked French toast to a wire rack set over a baking sheet and keep warm in a 200°F oven while cooking remaining slices.
- Just before serving, sprinkle each slice with the cinnamon-sugar mixture.
- Dust with powdered sugar and serve with warm maple syrup and fresh berries.
Plating
Arrange two slices of French toast on each plate, slightly overlapping. Dust generously with powdered sugar using a fine-mesh sieve. Place a small ramekin of warm maple syrup on the side. Scatter fresh berries around the plate for color and freshness. Add a small pat of butter on top that will melt into the warm French toast.
Storage & Reheating
French toast is best enjoyed immediately after cooking. If needed, store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster or in a 350°F oven for 5-7 minutes until warmed through. Do not microwave as it will make the French toast soggy.
