
Chef's Tip
For the juiciest burgers, handle the ground beef as little as possible and press a small dimple in the center of each patty before cooking. This prevents the burger from puffing up in the middle and ensures even cooking.
Instructions
- In a large bowl, gently mix ground beef with Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Handle meat as little as possible to avoid tough burgers.
- Divide the meat into 4 equal portions and form into patties slightly larger than your buns, as they'll shrink during cooking. Press a small dimple in the center of each patty with your thumb.
- Let patties rest at room temperature for 15 minutes while preparing other components.
- For the fries: Wash and peel potatoes. Cut into 1/4-inch sticks and place in cold water for 15 minutes.
- Heat oil in a large, heavy-bottomed pot to 325°F. Drain potatoes and dry thoroughly with paper towels.
- Fry potatoes in batches for 3-4 minutes until softened but not browned. Remove with a slotted spoon and drain on paper towels.
- Increase oil temperature to 375°F. Return potatoes to oil and fry until golden brown and crisp, about 3-4 minutes. Remove, drain, and immediately season with salt.
- Heat a large cast-iron skillet or grill to medium-high heat. Add oil.
- Cook burgers for 4 minutes on first side without disturbing.
- Flip burgers and cook for 3 minutes more for medium doneness (adjust time for desired doneness).
- Top each patty with a slice of cheddar cheese. Cover skillet for 30 seconds to melt cheese.
- Meanwhile, butter cut sides of buns and toast until golden brown.
- Spread bottom bun with mayonnaise and top bun with ketchup and mustard.
- Assemble burgers: Bottom bun, lettuce, burger with cheese, tomato, onion, pickles, top bun.
- Serve immediately with hot fries.
Plating
Place the assembled burger on one side of a large plate with a pile of hot fries on the other side. Add a small ramekin with additional ketchup for dipping. For restaurant-style presentation, insert a wooden skewer through the top of the burger to hold it together, and line the plate with parchment or wax paper.
Storage & Reheating
Cooked burger patties can be refrigerated for up to 3 days. To reheat, warm in a 350°F oven for 5-7 minutes. Fries are best enjoyed immediately but can be reheated in a 425°F oven on a baking sheet for 5 minutes. Store components separately and assemble just before serving.
